Avocado and vegetable sandwich
Two slices of whole wheat bread (use your favorite bread)
Basil pesto (spread some on each bread slice)
1/2 avocado, sliced thin or mashed
Sprinkle Feta or thin slices of fresh Mozzarella
Radish, sliced thin (or Roasted Red Peppers or Sun-dried tomatoes; the jar kind is good.)
Cucumber, sliced thin
Red onion, sliced thin
Kalamata olives (sliced thin, to taste)
Spring mix lettuce (use your favorite: iceberg, romaine)
Balsamic or Oil & Vinegar
Spread pesto and smashed avocado on both bread slices. Layer one slice of bread with the veggies any way you like: the cheese, radishes, red peppers or tomatoes, cucumber, onion, olives, and top with the lettuce of your choice. Add a splash of Balsamic or Oil & Vinegar dressing over the lettuce. Top with the second slice of bread.
