Salmon with a side of Bacon Brussels

Keep it simple.

Salmon Ingredients
Extra Virgin Olive Oil
Salmon, fresh center cut
Lemon, sliced thin
Salt and pepper, fresh ground is best
Parsley, fresh or dry
This recipe bakes up perfectly every time!
Method
Place a sheet of foil down on your sheet pan. Drizzle a little olive oil on the foil and use a lemon slice to spread the oil around a bit. Place two or three slices of lemon over this olive oil, then lay the salmon center cut down over the lemon slices. Then drizzle olive oil over the salmon, salt, and pepper, and place three or four slices of lemon over the salmon—season to your taste. Place salmon in the cold, yes, cold oven, set the oven at 400 degrees, and hit start—Bake in this cold oven for 25 minutes. Sprinkle with parsley once out of the oven.
Brussels Sprouts Ingredients
3 to 4 strips of bacon, chopped
4 to 5 cups of Brussels Sprouts, small ones halved, large ones quartered
Method
Toss Brussels with kosher salt, pepper, and extra virgin olive oil, then spread in a single layer on your sheet pan. Sprinkle your chopped bacon in a single layer on top of Brussels Sprouts. Roast 20 to 30 minutes until golden brown and lightly caramelized. Turn once during cooking so not to burn.
